Directions

  1. Preheat oven to 350.
  2. Combine flour and baking powder and set aside
  3. Combine chopped apples, cinnamon and sugar in separate bowl and set aside.
  4. Mix together oil and sugar. Add eggs at a time, beating well after each addition.
  5. Add orange juice and vanilla to the batter and mix well.
  6. Mix flour into egg mixture and combine well.
  7. By hand, add apples, walnuts and optional candied fruit to cake batter - 1/2 of each at a time. The batter is thick; keep stirring until combined well
  8. Grease a standard size bundt pan. Pour mixture into pan and cook cake 90 minutes (yes 90 - no typo).
