Ingredients
- 2 Cups of Whole Wheat Flour
- 1/2 Cup of Sugar
- 1 Large Egg
- 2 Large Egg Whites
- 1 Container (4 OZ) of Plain Yogurt
- 1/2 Cup of 2% Milk, Skim Milk or Almond Milk
- 1 TSP Vanilla Extract
- 1/2 TSP Cinnamon
- 1/2 TSP Baking Soda
- 1 TSP Baking Powder
- 1/4 Cup of Canola Oil
- 2 Brown Bananas
Directions
- Preheat the oven to 350 degrees.
- In a large bowl, mix all the dry ingredients - flour, sugar, baking powder, baking soda, and cinnamon. Make a well in the center and set aside.
- In a seperate bowl, mix all the wet ingredients - oil, egg, egg whites, yogurt, skim milk, bananas, and vanilla extract.
- Pour the wet ingredients into the dry until thoroughly mixed... no lumps in the batter!
- Add baking cups to a 12 pan muffin tin.
- Spray the pan and muffin cups with PAM.
- Pour the batter 2/3 of the way high in each cavity.
- Bake for 12 to 15 minutes until golden.
