Ingredients
- 2 Bunches of Broccoli Rabe
- 1 Packages of Sausage - Beef or Turkey - Hot or Sweet depending on preference
- 2-4 Cloves of Garlic, Finely Chopped
- 4 TBS of Extra of Virgin Olive Oil
- 1 LB of Pasta
- A Few Shakes of Red Chip
- Parmesan Cheese (optional)
Directions
- Bring a large pot of salted water to boil.
- Cut tough stems off broccoli rabe and rinse well
- Grill or broil the sausages in the oven broiler or grill until cooked.
- Once the water boils, add the broccoli rabe for about 5 minutes or until stalks are tender.
- Using tongs, remove the broccoli rabe from the boiling water and place broccoli rabe in a strainer. The goal is to keep the boiling water.
- Add the pasta to the boiling water and cook according to instructions on package.
- Once sausages are cooked, cut into bit sized pieces and set aside.
- Pour olive oil into a pan and cook garlic until lightly browned
- Add broccoli rabe and stir into oil and garlic; add sausage and cooked pasta to the pot and combine well. If dry, add additional pasta water or vegetable broth
- Top with a few shakes of red chip, parmesan cheese and serve.
