Directions

  1. Preheat oven to 325.
  2. Grease two 9-inch cake pans with 1 tsp butter. Set aside.
  3. Blend oil and sugar together in a bowl with mixer. Add eggs one at a time beating after each addition.
  4. In another bowl, sift together flour, salt, cinnamon, flour, baking powder and baking soda. Mix into egg mixture.
  5. Mix in carrots. Mix in walnuts.
  6. Pour half the batter into each pan. Bake for 45 minutes or until inserted knife comes out clean.
  7. Invert on a cake rack and cool.
  8. Icing Directions

    1. Blend softened butter, softened cream cheese and vanilla until fluffy .
    2. Add sugar and beat well.
    3. Cool in refrigerator before icing cake.
