Cake Ingredients
- 2 cups flour
- 1 cup sugar
- 4 eggs
- 1 cup vegetable oil
- 3 cups grated carrots
- 1 tsp vanilla
- 2 tsp baking powder
- 2 tsp baking soda
- 2 tsp cinnamon
- 1 tsp salt
- 1 cup chopped walnuts
- 1 tsp butter
Cream Cheese Icing Ingredients
- 8 ounces cream cheese
- 4 TB butter
- 2 1/2 tsp vanilla
- 2 1/4 cups confectionary sugar
Directions
- Preheat oven to 325.
- Grease two 9-inch cake pans with 1 tsp butter. Set aside.
- Blend oil and sugar together in a bowl with mixer. Add eggs one at a time beating after each addition.
- In another bowl, sift together flour, salt, cinnamon, flour, baking powder and baking soda. Mix into egg mixture.
- Mix in carrots. Mix in walnuts.
- Pour half the batter into each pan. Bake for 45 minutes or until inserted knife comes out clean.
- Invert on a cake rack and cool.
Icing Directions
- Blend softened butter, softened cream cheese and vanilla until fluffy .
- Add sugar and beat well.
- Cool in refrigerator before icing cake.
