Ingredients: Crust
- 1 Cup(5 oz) Chocolate Cookie Crumbs or 5 oz Chocolate Wafer Cookies
- 2 TBS Salted Butter, Softened
Ingredients: Filling
- 16 oz Cream Cheese, Softened
- 1/2 Cup White Sugar
- 2 Cups (16 oz) Sour Cream
- 3 Large Eggs
- 1 TBS Pure Vanilla Extract
- 1 1/2 cups (9 oz) Ghiradelli Semisweet Chocolate Chips, divided
Directions: Crust
- Preheat oven to 350 degrees.
- Blend or use food processor to grind cookies into fine crumbs.
- Add butter and blend until smooth.
- Press the crust into the bottom of a 9 inch springform pan, and refrigerate while preparing the filling.
Directions: Filling
- Beat cream cheese until smooth in large bowl using an electric mixer.
- Blend in sugar and sour cream.
- Add the eggs one at time and mix until smooth.
- Mix in vanilla.
- Use a spoon to stir in 1 cup of the chocolate chips.
- Pour filling into the crust-lined pan, and smooth top with spatula.
- Sprinkle remaining 1/2 cup of chocolate chips evenly over the top.
- Bake for 30-40 minutes.
- Turn off oven and leave cheesecake to set in oven for 1 hour.
- Remove from oven and chill in refrigerator until firm about 3-4 hours.
