Ricotta Cake

Juana's Ricotta Sheet Cake with a Hint of Citrus

  1. Preheat oven to 350 degrees.
  2. Prepare the cake batter as directed on the package combining mix, water, softened butter and eggs. Mix well and pour into a greased 11 X 14 pan.
  3. For the ricotta portion, mix ricotta, vanilla and sugar and beat well. Add remaining 3 eggs, one at a time. Fold in the lemon or orange zest and blend well.
  4. Pour the ricotta mixture on top of the cake batter in the pan and spread evenly.
  5. Bake at 350 for one hour.
  6. Optionally sprinkle with confectionary powder, cut and enjoy.
