- Red Peppers
- Butternut Squash
- Sweet Potatoes
- Carrots
- Rudabegga
- Mushrooms
- 2-4 TBS Olive Oil
- 1 tsp Thyme

Directions
- Cut up the vegetables into 1-2 inch pieces and toss in olive oil and thyme.
- Preheat oven 400 degrees.
- Once oven reaches 400, line a cookie sheet with tinfoil, line the cookie tray with the vegetables.
- Bake for 40 minutes until tender
