Roasted Vegetables with Herbs

Directions

  1. Cut up the vegetables into 1-2 inch pieces and toss in olive oil and thyme.
  2. Preheat oven 400 degrees.
  3. Once oven reaches 400, line a cookie sheet with tinfoil, line the cookie tray with the vegetables.
  4. Bake for 40 minutes until tender
